This recipe is also known as Cockeyed Cake or Screwy Cake.

This yields a rich, moist and chocolatey cake, also suitable for making as cupcakes if you are inclined to dirty more dishes.

Because the brilliance of this cake is that you mix it right into the pan you bake it in.

It takes about 5 mins to mix it up, slightly more if you can’t put your hands on the vinegar.

prepare a 9 x 9 greased or sprayed pan.

pour in

1 &  1/2  cups flour

3 tbsp cocoa (the darker the better)

1 tsp baking soda

1 cup sugar

1/2 tsp salt

give it a gentle shake or stir a bit  to partly mix, then make 3 shallow wells to pour into one well:

5 tbsp cooking oil

in another

1 tbsp vinegar

then in the third

1 tsp vanilla

pour over the whole pan 1 cup cold water

stir with a spoon like you are making a mud pie until it is nearly smooth and you don’t see flour.

bake at 350 degrees F for half an hour.

note

years ago, a friend tried to substitute any other sweeter for the sugar, and while the frozen orange juice and mashed bananas gave an interesting flavour and texture, sugar is needed for the chemical reactions.

perhaps try a raw sugar or cane sugar in ratio to refined. if that’s a concern for you

I had guests this weekend
and, at one point, I was
stuck by the joy in the
kitchen. A group of us
were preparing the mountains
of food we ate, and were
laughing and sharing stories
from our lives. Sometimes one
of us would break into song
and the others would join in.
Occasionally, one of the men
would come in to find out why
we were laughing so much, or to
get a tidbit one of us was sure
to give him.

I always like big, sunny kitchens,
with cozy places to linger, and
lots of work space. The kitchen is
the heart of my home, and I keep
it filled with wonderful aromas,
a table of love disguised as food,
and generous amounts of laughter.

Won’t you stop by for a visit
and a piece of my famous chocolate cake?

I never understood why peer pressure
held such sway over people
and it’s been shocking to learn
that in some ways
most people never really leave high school

I have always danced to the music in my own head
and not cared for the marching songs
of society or authority

I guess that’s what makes those of us who
belong to subcultures
so out of step with mainstream society.

I am a proud geek and a lesbian.
both at the same time.

How often people work
very hard to achieve
something, only to quit at
the last moment or do
something to hinder their success.

What if we have a deep feeling
that we do not deserve good
things in life? That somehow,
we are not as nice as people think
we are, we are not as smart, talented,
trustworthy, kind, etc. as we
“should” be, so we limit what we
could accomplish by our own
judgment of ourselves.
Just think about it.

At times we draw people into
our lives who can mirror what
we need to learn. I recently
discovered that someone I
thought was trustworthy had
been lying to me for years.
This has happened repeatedly
in my life, finally I stopped
and asked myself why. Are
people basically untrustworthy;
was I assuredly naive? Then,
as so often happens, I was shown
the answer to this question.

The author of a book* I was reading
talked about discernment in trust.
He said that there were levels of
trust and we should not entrust
certain things with certain people,
who are basically honest but not
necessarily with every thing. Now,
this as an obvious observation,
I suppose, but to me, a person was
either trustworthy or not. Can’t
be a little pregnant.

Integrity is an important value to me.
I watch mine carefully as it is easy
to compromise one’s integrity…

Pan fry or grill onions, chive  and minced garlic

Add  your fave brand veggie burger to the pan

Add zucchini slices

(optional mushrooms, bell peppers, tomatoes or any burgerish topping you enjoy)

to assemble

place a patty on the plate

put your favorite cheese – I used havarti in this example, but any cheese works

top with second patty

cover with onions and zuke slice

enjoy!
