Lemons and Limes

Every now and then, you may be inspired to juice a citrus fruit.
Maybe for lemon or lime aid, maybe to add to a marinade or some other cooking or baking attempt.
There’s lots of kitchen tools that help make juicing easy, but here’s two tricks to maximize the citrus juice output:
Pressure
Place the citrus fruit on the counter and put your hand on it, palm down.
Press down firmly, hard enough to slightly flatten the the fruit on the counter side.
Continuing to press down, roll the citrus fruit back and forth along the length of your hand several times.
Cut the fruit in half and ream it or use a juicer.
Heat
Pour boiling water into a glass bowl or measuring cup (at least a 2 cup size).
Put your citrus fruit into the boiling water for a few minutes.
Remove, slice and juice away.
What both these processes are doing is rupturing all the membranes that form the little juice bags inside the fruit – ensuring you a maximum yield.
